手工面煮食方法
A. 手工面清汤
将手工面放入沸水煮约2分钟,
然后捞起待用,
把佐料放入煮好的高汤里,
然后将高汤连同佐料倒入面里
撒上青葱炸葱头即可享用

若喜欢口感QQ的面条,
煮面达1分钟20秒左右,
也就是面还有稍微一些硬度的时候捞起
那么倒入高汤上桌的时候,
面正好焖得刚好,
口感Q得来又爽口。
B.干捞面
将手工面放入沸水煮约2分钟,
然后捞起待用,
淋上适量酱油、葱蒜油/猪油、高汤等
把已经炒好煮好的佐料铺在面上
撒上青葱炸葱头
再捞一捞面条即可享用
C.炒面
水滚后,面下了,只要用筷子搅了面从粒状开始要散开后即可捞起,面还处于硬硬的状态,炒的时候再加水大火翻炒,面就会软得刚刚好又不会糊烂。
下油,蒜米配料一起炒香,加适量水,加一点鸡粉,下面条,淋上一点黑酱油和酱油,大火用筷子翻炒,最后下豆芽,翻炒一下就上锅。
若要加sambal cili padi 等的
就要下油,蒜米和sambal cili padi炒香,再下配料炒,后面的步骤如上。
