In the early days, prawn crackers were orange in colour and large in shape.
The reason for this is that a lot of flour, shrimp powder, colouring and swelling agents were added.
The addition of so many additives caused the freshness and sweetness of the prawns to be lost on the palate and made them unhealthy to eat.
As a result, prawn crackers have become an unhealthy snack in people’s minds.
However, with the efforts of the manufacturer to bring back childhood memories and meet modern health requirements.
With the addition of the traditional prawn crackers, the fresh prawn crackers have been created by removing and replacing all the additives and retaining the freshness and sweetness of the prawns themselves.

Fresh prawn crackers are made from fresh prawns that have been de-bearded, eyed and de-sanded, stirred with potato flour, salt and pepper and then pounded.
The dough is kneaded until it reaches a certain elasticity and toughness.
During the process, unnecessary colours, MSG, spices and preservatives are removed.
Place the dough in a steamer, allow to steam and store in the freezer at a low temperature.
In the meantime, remove the half-finished product and cut it into slices.
then placed in the sun.
The product is then dried and can be stored for up to a year.

浓郁虾味香脆的鲜虾饼片(未炸) 500克 +-
虾饼,早期是沿海地区居民的零食小吃,
普遍到家家户户都会製作。
但由于社会型态的转变,
从靠山吃山、靠海吃海的传统社会转变成工商社会时,
这样的儿时回忆已不复见。

厂商就将儿时的记忆经由灵巧的双手来变化出这一片片金黄酥脆的虾饼片。
早期虾饼片为橘红色且大片大片的形状,
是因为加入了许多的面粉、虾粉、色素、膨胀剂,
也因为加入了如此多的添加物造成食用者并无法感受那新鲜海虾本身所具有的鲜味及甜味也吃进了不健康,
而使得虾饼在人们的观念中是一种不入流的零食小吃。
但是在厂商努力的将儿时记忆加上符合现代人对健康的要求下,
将传统虾饼的添加物一一都去除置换掉且能保留新鲜海虾本身的鲜味及甜味的鲜虾饼片饼诞生了。

鲜虾饼片饼是由新鲜鲜虾经去鬚、剪眼、挑沙筋、加薯粉、盐和胡椒粉等搅拌后加以捶打,
搓揉直到麵团的弹性与韧性到达一定的质感,
过程中捨去不必要的色素、味精、香料与防腐剂。
随即放入蒸笼,待吹蒸熟后放入冷藏室低温存放,
同时取出之前完成的半成品切成片状,
置于阳光下曝晒,
即为乾货,而存放期限可达一年之久。

阿莫最快乐的,是看着干如木屑的虾饼片,
经油一炸,快速的膨胀开来,颜色变淡,
如一朵迸裂的鲜花,在热油里绽放。
捞起来沥干油,便送上桌了,
大人小孩都抢着吃,喀哩喀啦的声响,此起彼落。

阿莫更喜欢将虾片放在舌尖,
感觉它吸收了舌上的水分,更紧密地黏着。
仿佛不只是我在吃它,
它也试图吞噬我,这种互动很刺激。。。
